It's Friday! Yeah! And at my house, we call it Free Friday. Mainly because I give the kids the day off from chores and piano practice. For me, because it's my day to take it easy. I let myself go back to bed after they leave if I want, I can work out . . . or not, and I don't have to do a dang thing except go out on a fun date with the hubby.
The OTHER reason I'm so excited about this day is because KarenG is having a blogging bar-b-que. And what's that, you say? I'll tell you! It's a great way to make new friends and get new followers, which we all want!

Free Friday is a great idea. My kids would have loved that, since they have this strange idea that I was always working them to death. They got free Sunday, does that count?
Karen- I can't take all the credit! I got it from my sister. And funny thing. My kids think I work them to death too! Ha! They'll turn out to be great in the end and thank me!

Free Friday rocks! I came over from Karen's BBQ to say hello and find out more about this frogs eye salad, what is it?
Recipe to frog eye salad!
Ingredients
* 1 cup white sugar
* 2 tablespoons all-purpose flour
* 2 1/2 teaspoons salt
* 1 3/4 cups unsweetened pineapple juice
* 2 eggs, beaten
* 1 tablespoon lemon juice
* 3 quarts water
* 1 tablespoon vegetable oil
* 1 (16 ounce) package acini di pepe pasta
* 3 (11 ounce) cans mandarin oranges, drained
* 2 (20 ounce) cans pineapple tidbits, drained
* 1 (20 ounce) can crushed pineapple, drained
* 1 (8 ounce) container frozen whipped topping, thawed
* 1 cup miniature marshmallows
* 1 cup shredded coconut
Directions
1. In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
2. Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
3. In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.
